Indonesian Food and Nutrition Progress is devoted to a rapid peer-reviewed full-length original research paper, short communications, and critical reviews, which serves as an international forum to provide a platform for scientists and academicians all over the world to promote, share, and discuss various new issues and developments in different areas of food and nutrition.The scope of the covered topics in the journal is a wide range of food technology and nutrition including:Physical properties of food,Chemistry of food,Food biotechnology,Food microbiology, including methods for detection of foodborne microorganisms or microbial toxins, predictive microbiology, microbial ecology of foods, microbiological aspects of food safety, and microbiological aspects of food spoilage and quality.Food process engineering, including thermal processing, thermal properties, measurement, control, packaging, storage, and distribution; engineering aspects of the design and production of novel foods and of food service and catering; design and operation of food processes, plant and equipment,Food analysis,Food safety and hygiene, including food additives, chemical and microbiological contaminants, and other agro-chemicals, together with their metabolism, toxicology, and food fate.Nutritional in food, including bioactive constituents of foods, such as antioxidants and phytochemicals.Post-harvest technology,Sensory Evaluation,Gastronomy,Functional Foods,Novel foods.Indonesian Food and Nutrition Progress will not consider papers that focus on economic and management aspects without any contribution to food processing.
